Spicy Black Bean Burger
2 – 15 oz can organic black beans, drained and rinsed
1 – large onion diced
1- ear of corn (grilled if desired)
½ cup cilantro, chopped
1 – large carrot, grated
½ cup ground oats
2 – Tbsps EVOO
1 – tsp cumin
Pinch of cayenne
Salt and pepper to taste
Sauté onion and grated carrot in one Tbsp EVOO until softened set a side
Mash half of the black beans with a fork or process in food processor
Mix remaining beans, mashed beans, onion mixture, spices and herbs together and form into patties. Pan sear 3 minutes on each side in a sauté pan or place in oven at 350 for 25 minutes.
I love to eat this burger on a bed of arugula with a chipotle aioli
Chipotle aioli
1 cup vegan mayo
1 teaspoon Chipotle Chiles in Adobo
2 teaspoons Lime juice
½ teaspoon Cumin
